La Badia Culatello


Culatello is often referred to as the King of Salumi.  Made with the 'fillet' of the pig leg, culatello is then spiced, lightly salted and cured for 8-12 months.  The result is slightly drier than prosciutto, wonderfully fragrant with a mildly robust flavour.
