Frozen Chickpea Farinata Flatbread (8x320g)
Chickpea farinata is a typical specialty of Liguria.
It is a very low savory cake prepared with simple ingredients: chickpea flour, water, salt and oil.
Its origins date back to the Greek and Roman periods, when soldiers used to prepare a mixture of chickpea flour and water which they then cooked in the sun or on their shield.
The result was so nutritious that the recipe survived into the Middle Ages.
The legend according to which farinata was born in 1284, by pure chance, when Genoa defeated Pisa in the battle of Meloria dates back to this period. Returning from the battle, due to a storm, some barrels of oil and chickpea flour on the Genoese ships spilled into the salt water. The mixture formed was recovered and left to dry in the sun. Thus a kind of tasty pancake was born.
From there it was a short step to putting the mixture to cook in the oven. The result was so good that, to mock the losers, it was called the gold of Pisa.
In La Spezia, the extreme limit of the Ligurian East, for generations, a fainà has represented the favorite food to be enjoyed in the city's restaurants or directly on the street.
