Our whole wheat freselle start from a mother yeast, which gives the dough a complex flavour. After being twice-baked, they resemble dried bagel halves, and run about five to six inches in diameter. Originating from the south of Italy, these regional specialties are usually topped with capers, chopped tomatoes, olive oil, thinly sliced red onions, crumbled feta cheese and oregano.
