 Bresaola is a traditional Italian air-dried, salted beef that's aged until it's firm, lean and delicately flavoured. It's less salty than prosciutto and offers a lingering, nutty taste on the palate. Try it sliced thinly with a drizzle of olive oil, lemon juice, and shaved parmigiano reggiano.
