Altobello products are air-dried next to a national park, high in the mountains of Abruzzo. Lardo is a traditional Italian cured fatback, typically made from the back of the pig and seasoned with a blend of salt, herbs, and spices, then slowly aged to develop its silky, melt-in-the-mouth texture. Lardo is prized for its delicate, creamy fat and subtle, aromatic flavor rather than its meaty taste. Slice it paper-thin and serve on top of warm crostini to let it gently melt.
