Prosciuttificio Montevecchio is located at the foot of the Tuscan-Emilian Apennines, which lends excellent microclimatic and enviromental conditions for prosciutto production. 

Montevecchio guanciale is made exclusively from Italian pork jowl. Unlike pancetta, guanciale has a higher fat content, which renders beautifully when cooked, creating a luxurious, melt-in-the-mouth richness. Crisp it up in a pan and try it in a carbonara or amatriciana.
