Flat Pancetta is a traditional Italian cured pork belly, carefully seasoned with salt and aromatic spices, then slowly air-dried. Unlike rolled pancetta, the flat variety retains its slab-like shape, making it ideal for slicing or dicing. It has a delicate, slightly sweet flavour with a gentle porky richness and a silky, tender texture. Flat Pancetta is perfect in a pasta carbonara.
