Without a doubt, it is one of the most appreciated Spanish cheeses in the world. After 12 months of careful maturation, its color is yellowish. With an intense lactic smell, it presents a strong flavor bringing nuances of nuts. Its texture is compact but creamy and it can be slightly grainy due to its high curing.
