Altobello products are air-dried next to a national park, high in the mountains of Abruzzo. Capocollo, known to some as gabagool, is a cured meat made from pork neck and shoulder. This spicy version is buttery and delicate, but with a fiery kick. Capocollo is best enjoyed paper-thin, and pairs well with cheeses like provolone and manchego on charcuterie boards or in panini.
